Unsaddle

Unsaddle is a compact mod that provides a humane way to remove saddles from animals without having to kill them. Simply crouch and right-click on a saddled animal (strider or pig) to retrieve the saddle.

Starting from version 0.2.0, you can also remove chests from donkeys and mules!
